Sweet Potato Salad for WeightLoss

Sweet potato – 1200 Grams ( Peeled and cut into biggish chunks )
Olive oil – 1 Tbsp
Shallots – 2 Nos
Spring onions – 4 Nos
Sherry vinegar – 5 Tbsp
Extra-virgin olive oil – 2 tbsp
Honey – 2 Tbsp


Preparation Method for Sweet Potato Salad for WeightLoss

Heat oven to 200C/180C fan/gas 6.
Toss the sweet potato chunks with the oil and a few seasoning, and spread on a baking parchment-lined baking sheet.
Roast for thirty – thirty-five minutes till tender and golden.
Cool at room temperature.
When with regards to cool whisk along with all the dressing ingredients with a bit a lot of seasoning and gently toss through the potato chunks – use your hands to avoid breaking them up.
